As our veggies...mainly tomatoes starting filling up our buckets it was time to start the time consuming task of canning.
Canning is one of those things, for me at least, that do take time and is a lot of work but it is always nice to see all the bottles filled. I think this was about a third of tomatoes we had picked so we had plenty to do.
Tomatoes actually are not too bad, especially if they are just your stewed tomatoes. Although I want to try to expand and do some other things as well with the overwhelming amount of tomatoes we had.
After getting everything ready it was time to start canning. The first week we were back from our vacation I spent many hours in the kitchen and of course it was like a 100 plus degrees outside. It was not fun heating up the kitchen but after 4 days of canning we were able to get our first round of tomatoes all canned.
This was just the first batch of stewed tomatoes. After a few more batches I wanted to do something else. We also ended up doing some salsa which we were able to use up the first our our peppers as well. For the final batch we did tomato soup which I am very excited about. It is a recipe that I got from a family friend and it is really hard to go back to Cambells. I am glad that with the lack of rain our little garden is doing so well. When everything is all bottled up I'll let you know the total ;) Happy canning to all those who have started as well :)
