Sunday treats

Usually when Eric doesn't have to work on Sunday I like to make a Sunday treat. Thomas seen this cookie that he wanted to make to I thought we would try it out. It was a berry ricotta tartlet. Thomas wanted to make it so I gave him a little help but he did most of it by himself. They turned out pretty good, thanks to our little chef Thomas :)

 The dough was somewhat like a sugar cookie but better! Here he is mixing the dough.
 We used strawberries, blueberries, and raspberries. I got Thomas this knife a while ago, it is called a lettuce knife but it is perfect for him cut because it is a plastic knife so he can't cut himself.
 After cutting and washing the berries we added some lemon juice, honey, and a little powered sugar to give the berries a little extra flavor.
 He then had to mix the ricotta mixture..ricotta cheese, powered sugar, and lemon zest. (It might sound a little odd that it was ricotta but it had a nice flavor)
 After letting the dough rest he rolled it out with is own little rolling pin.
 Then he cut the cookies with he little T-Rex cup, they made a perfect circle. as you can see he was working pretty hard :)
Here is his final product! We just topped with the ricotta mixture and berries and whoola! They were so yummy, thanks Thomas :)

  1. They look absolutely delicious! I hope he is planning on making us treats at the "reunion". Boy he is a great cook.

  2. The tarts look like they are straight out of a magazine! Great idea with the lettuce knife. I think I'll need to pick up a couple.
